As you saw before, my old NYC roommate, Alix Altit, made this awesome video with a healthy drink recipe. Now, she has created another video with a really great idea for an easy, healthy dinner…and I mean really easy…it takes her about 5 minutes to make the meal.
I know, I really hate cooking, mostly because I hate cleaning up the dishes after. I need more recipes like this in my life!
Here is a break down of her recipe:
- Left over, plain roasted chicken with a spoonful of mustard or mayo
- Chopped up vegetables of any kind
- Half of avocado
- 1 hard boiled egg
- Mix it all up
And there you have it, folks! This is an easy weekday meal that is full of protein to keep you full longer.
